Green Bean Casserole

Ingredients

  • 1 can (10 1/2 ounces) Campbell’s® Condensed Cream of Mushroom Soup or 98% Fat Free Cream of Mushroom Soup or Condensed Unsalted Cream of Mushroom Soup
  • 1/2 cup milk
  • 1 teaspoon soy sauce
  • 4 cups cooked cut green beans
  • 1 1/3 cups French Fried Onions (amount divided in recipe steps below)

Instructions

  1. If preparing using Unsalted Cream of Mushroom you can add salt to taste. Our test kitchen found that 1/4 teaspoon of salt enhanced the flavor of the recipe and contributes an additional 98.3 mg of sodium per serving, but you can add less or more to make it right for you.
  2. Heat the oven to 350°F. Stir the soup, milk, soy sauce, beans and 2/3 cup onions in a 1 1/2-quart casserole.  Season the mixture with salt and pepper.
  3. Bake for 25 minutes or until hot. Stir the bean mixture.  Sprinkle with the remaining 2/3 cup onions
  4. Bake for another 5 minutes or until the onions are golden brown.

Other

1 pound green beans
8 tbsp. salted butter
1 large onion
8 ounces sliced mushrooms
3 cloves garlic minced
2 1/2 cups half-and-half
2 tsp. soy sauce
1 tsp salt
1 tsp pepper
2 tbsp flour
2 cups fried onions
1/2 cup parmesan, grated

In a large skillet, heat 4 Tablespoons of butter over medium-high heat. Add onions and cook until tender and caramelized, about 7-8 minutes, stirring often. Add mushrooms and cook for 4 minutes longer. Stir in garlic and cook for 1 minute. Transfer the mixture to a bowl.
After the onion-mushroom mixture has been removed, use the same skillet. Heat skillet to a medium heat and add remaining 4 Tablespoons of butter. Add flour or cornstarch and begin to quickly whisk the mixture. Let cook, whisking often, for about 2 minutes. Stir in half-n-half, soy sauce, salt, and pepper. Cook for 4-5 minutes until mixture thickens. Taste and check for seasonings.
Preheat oven to 350 degrees. Bring a large pot of water to a boil. Add green beans and cook for 6-7 minutes. Drain and transfer to ice bath to cool (optional).
Add onion-mushroom mixture to cream sauce and stir. Add green beans and stir to coat. Sprinkle with parmesan cheese, if using. Pour into a 9 x 9 baking dish. Bake for 25 minutes or until bubbly. Remove from the oven and cover with fried onions. Bake for 5 minutes longer. Serve immediately, if possible.
