Serves 2
1 cup oatmeal
2 cups filtered water
1 tbsp. yogurt
Dash of salt
The Day Before:
Combine oatmeal, 1 cup filtered water, and yogurt in a glass bowl. Cover with a cloth, and leave it on your countertop overnight.
In the morning:
Quickly bring another cup of water and salt to a boil. Add the oatmeal/yogurt mixture to the pan, stir, and reduce heat. Simmer several minutes.
We always add butter or heavy cream to our oatmeal. We also love to add “fix-in’s” like sucunat, strawberries, raisins, chopped apples, or maple syrup to our oatmeal.
