- 1 pound homemade turkey sausage
- 1-2 tablespoons butter
- 4 tablespoons flour
- 1 cup milk
- 1 teaspoon salt
- 1/2 teaspoon pepper
Brown sausage in butter. Stir in flour, scraping up brown particles stuck to the bottom of the pan. (Scrape and stir constantly.) Cook over medium-high heat 2 to 3 minutes, continuing to stir constantly, until mixture is light golden brown. You’ll have a better flavor if the flour cooks well.
Stir in milk. Heat over medium-high heat, stirring constantly, until mixture is boiling and thickened. If the gravy is too thick, stir in more milk, a splash at a time, until the desired consistency is reached.
Stir in salt and pepper to taste. (I love lots of pepper in this gravy!)
Serve over baking powder biscuits. (Note: I usually make the biscuits, pop them into the oven, then make the gravy while they are cooking.)
