1 cup milk
¼ cup melted butter
½ tsp. vanilla
1 egg
2 cups flour
1/3 cup sugar or sucanat
3 tsp. baking powder
½ tsp. salt
1 cup fresh or frozen blueberries
Streusel Topping:
¼ cup flour
2 tbsp. brown sugar
2 tbsp. cold butter
¼ tsp. cinnamon
Grease 12 muffin tins.
Beat milk, butter, vanilla, and egg. In a second bowl, combine flour, sugar, baking powder, and salt. Add flour mixture all at once to wet ingredients. Stir just until flour is moistened. Fold in blueberries.
Use an ice-cream scoop to fill muffin tin. Sprinkle each muffin with streusel topping.
Bake at 400 degrees for 20-25 minutes. Immediately remove from pan.
