Homemade Matzoh

Matzoh means unleavened bread, or bread made without yeast. You can buy it from the store, but why, when the homemade variety is so delicious and easy?

Ingredients:

1 cup warm water
1/4 cup sugar
2 teaspoons salt
4 tablespoons butter, melted
2 1/2 cups unbleached white flour

Procedure:
  1. Preheat oven to 300 degrees.
  2. Combine all ingredients in a large bowl, using a wooden spoon or your oiled hands.
  3. Turn out onto a floured countertop and knead until smooth.
  4. Use a rolling pin to roll out the dough until it is about one-quarter inch thick.
  5. Put on a cookie sheet and poke generously with a fork.
  6. Bake at 300°F for 30-40 minutes, until golden brown.
Variations:
  1. The sugar is optional. Honey (1/4 cup) can also be used.
  2. For different flavors, try using different kinds of oil in place of the melted butter. Olive oil and coconut oil are delicious.
  3. Add 1 teaspoon cinnamon, 1/4 teaspoon cloves, and 1/4 teaspoon nutmeg to the dough, or sprinkle cinnamon and sugar, plus melted butter, over the baked matzoh.
  4. Try shaking a seasoning blend over the top before baking, such as garlic salt or steak seasoning.
  5. Consider rolling out small circles of dough and frying in butter in a skillet over medium heat, rather than baking the dough in the oven. Yum!
  6. Make matzoh pizza by rolling dough into thin circles and pre-baking for 7-8 minutes at 375 degrees. Remove from oven, add desired toppings, and bake for an additional 10 minutes. If toppings aren’t browned enough after 10 minutes, place pizzas on the top rack of the oven and turn setting to BROIL. Broil for 1-2 minutes or until tops are browned.
