1 egg
1 cup flour
¾ cup milk
1 tbsp. maple syrup
2 tbsp. melted butter
1 tbsp. baking powder
¼ tsp. salt
Beat egg with a whisk in medium bowl until fluffy. Beat in remaining ingredients until smooth. Divide evenly among 12 muffin tins.
Bake at 350 degrees for 20-25 minutes.
Serve with butter and maple syrup. Sometimes we add frozen blueberries to the puffin mix before baking.
